Fig & Blue Cheese Bruschetta

4 Large figs cut vertically into 1/4s or 1/8s

1 Baguette cut into 2cm thick pieces

20g Butter

2tbsp of brown sugar

2tbsp of balsamic vinegar

Blue cheese to top each bruschetta piece

Basil for topping


Add your baguette slices to a tray and drizzle with olive oil. Toast in the oven until golden and crisp. On a medium low heat add olive butter to your gourmet pan. Once heated add in the brown sugar and stir until slightly dissolved, then add in your balsamic vinegar and stir. Once the vinegar is mixed and in your figs and leave to simmer for 10 minutes until figs are caramelized and the sauce is a glossy consistency. Smear each piece of toast with blue cheese and add a fig piece on top. Drizzle the rest of the sauce over each bruschetta piece and top with basil.
