Prawn Fried Rice
Ingredients
2 cups day old cooked rice
3 eggs lightly beaten
400g approx raw prawn meat
I tablespoon finely chopped garlic
1 tablespoon finely chopped ginger
2 tablespoons soy sauce (extra if too dry)
1 red chilli finely chopped
2 shallots finely chopped
1/2 cup frozen peas
1/2 cup carrot chopped
1/2 cup corn kernels (optional)
2 tablespoons vegetable oil
approx 2 teaspoons sesame oil
Method
Heat the wok on a high heat. Add the vegetable oil. When hot add the eggs and scramble until just done. Remove eggs. Add the sesame oil, ginger, garlic, onion and chilli. Stir until lightly browned. Add the rice and mix through. Add the soy sauce and keep stir frying. If too dry add a little more soy sauce. Add the vegetables. Add the prawns and egg and stir through. Cover for 1 minute approx. Stir again until prawns are pink Garnish with extra chilli or finely sliced spring onion.
