Prawn Omelette
Ingredients
6 eggs
150g cooked prawns, peeled and chopped
⅓ small red onion, diced finely
1 tsp white pepper
1 chilli, chopped finely
1 tbsp sesame oil
1 tbsp light soy sauce
2 tbsp coriander, chopped
Method
Heat your wok on a medium high heat, and add in your sesame oil. Whisk together your eggs, prawns, red onion, white pepper and light soy sauce. Pour your omelette mixture into the wok, add half of your coriander to the omelette and cook for 3-4 minutes. Pop the wok lid on, leaving a bit of room for the steam to evaporate and cook for another 2 minutes. Once you can see the omelette is half cooked, take the lid off and fold your omelette in half using your spatula. Once you can see the omelette is cooked to your desire, serve with more coriander to garnish.
